Modern Gourmet Holiday Menu

For those not tied to tradition, and looking for an elevated meal, this is the perfect holiday menu. Little neck clams are roasted open-faced in the pizza oven with bacon, poblano and bread crumbs. Each bite is full of crunchy, garlicky, buttery goodness. For the entree, blueberries, roasted hazelnut and pork is an inspired combination. The deeply browned, crisped pork skin from the heat of the grill is not to be missed. The rapini takes on a hearty, grill-kissed flavor, while the roasted Brussels sprouts are a wonderfully earthy side - made even better with the addition of bacon and onion jam. To finish the meal, a decadent pie made with tart apples, a rich, sweet sauce, and spiced, crunchy pecan streusel combine with the heat of the grill to make magic.
