Cranberry Pear Relish
Bursting with the vibrant flavors of fresh orange juice, crisp pears, and tart cranberries, this relish offers a delightful balance of sweet and tangy notes in every spoonful.
- 1/2 cup freshly squeezed orange juice (about 3 oranges)
- 3/4 cup pure cane sugar
- 1/4 teaspoon kosher salt
- 1 pound frozen or fresh cranberries
- 2 large just under-ripe Anjou or Bosc pears, peeled and diced
- 1 tablespoon finely grated orange zest
Bring the orange juice, sugar and salt to a boil over high heat on the grate of your Hybrid Fire Grill or a side burner. Add half of the cranberries and stir occasionally. Cook for about 10 minutes or until the cranberries start to pop and the mixture begins to thicken. Add the remaining cranberries, pears, and zest, and cook 5 minutes longer. Taste for sweetness and add more sugar if desired. Transfer the relish to a bowl and let it cool to room temperature before serving or chilling.
Grillmasters Tip: Save some time the day of your meal and prepare this relish up to 3 days in advance. It can be served at room temperature or chilled.
