Apple Latkes
Apple Latkes are a celebration of cozy flavors and crisp textures, blending sweet, tart apples with warm spices like cinnamon, cardamom, and nutmeg. - 1 pound apples mixed (Granny Smith, Golden Delicious, Honeycrisp, or Gala will work)
- 2 tablespoons fresh lemon juice
- 2-4 tablespoons granulated sugar, depending on the sweetness of the apples
- ½ teaspoon cinnamon
- ¼ teaspoon ground cardamom
- ⅛ teaspoon ground nutmeg
- 2 large eggs, lightly whisked
- 6 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- Neutral oil
- Smoked Creme Fraiche
- Smoked Caramel Sauce w/Flaky Salt
- Pomegranate Seeds and Smoked Rosemary Honey
- Ricotta, Orange Marmalade, and Cinnamon
Preheat the oven to 200°F and place a baking sheet inside. Peel and core apples and then grate them using the large holes of a box grater or the shredding blade of a food processor. (If you use a food processor, lay the apple chunks the long way for longer strands.) Transfer to a clean dishtowel and wring out as much juice as possible.
Transfer the grated apple to a medium bowl and toss with lemon juice. Add the sugar, cinnamon, cardamom and nutmeg and stir well to combine. Taste the mixture for sweetness adding more sugar if needed. Stir in the flour, baking powder and salt and mix until combined.
Remove the baking sheet from the oven and place a baking rack over it. Into a large nonstick or cast iron pan over medium heat pour ¼-inch of oil. Heat until the oil begins to shimmer.
Working in batches to not overcrowd the pan, scoop the latke batter in heaping tablespoonfuls and use your hands to shape into a disc. Add to the pan and fry until golden brown underneath and the edges are crispy about 2 minutes. Then flip and cook until the second side is browned, about another 2 minutes. Use a spatula to remove to the baking rack and transfer to a preheated oven to keep warm. Repeat with the remaining batter. Top as desired.
