Kalamazoo Special Burger Sauce

This is the hallmark sauce of our Smashburger and Patty Melt. Slather this slightly smoky, briny sauce on any burger or use it as a dip for grilled shrimp or crispy French fries. Burger sauce, or fry sauce, as it is also known, was popularized in Salem, Utah where it first appeared in 1955 at Stan's Drive-In.

Ingredients
  • 1 cup prepared mayonnaise
  • ½ cup ketchup
  • 1 tablespoon whole grain Dijon mustard
  • A few dashes of Worcestershire sauce
  • ⅓ cup finely diced cornichon, plus 1 tablespoon of the brine
  • 1 teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
Directions

Whisk together the mayonnaise, ketchup, mustard, cornichon, paprika, salt and pepper in a medium bowl until smooth. Cover and refrigerate for at least 1 hour and up to 72 hours to allow the flavors to fully meld.
