Join Steven Raichlen — the acclaimed authority on barbecue, best-selling cookbook author, and TV host — for an immersive grilling experience at our Culinary Center in Chicago. On Friday night, participants will enjoy a private welcome dinner at a James Beard award-winning chef's event space. On Saturday, Raichlen will teach a hands-on class using the full range of Kalamazoo’s luxury outdoor kitchen appliances, including the Hybrid Fire Grill, Gaucho Grill and Artisan Fire Pizza Oven. Participants will learn about a variety of grilling and smoking techniques, including rotisserie roasting a whole animal over a live wood fire, grilling the perfect steak by combining direct and indirect heat, and mastering the art of smoking with the Kalamazoo competition-grade charcoal smoker cabinet. The class will conclude with a family-style midday feast featuring the dishes demonstrated throughout the class.

Enjoy a private welcome dinner at the chefs table at James Beard Award-winning executive chef Paul Kahan’s event space, Publican Quality Meats. The entire restaurant has been reserved for the evening, and will begin with hors d’oeuvres and cocktails at the chef’s table, followed by a seated family-style meal.
Roundtrip transportation from the hotel to a dinner will be provided.
Saturday, July 15
Transportation from the hotel to Kalamazoo Outdoor Gourmet’s state-of-the-art indoor Culinary Center, located steps from Chicago’s famous Restaurant Row.
Breakfast and coffee service will be provided upon arrival.
Raichlen will teach a 4-hour hands-on outdoor cooking class, where particpants will learn about some of his favorite barbecue and smoking techniques and dishes. Participants can hone their culinary skills alongside Raichlen using Kalamazoo’s full range of luxury grills and pizza ovens and the new gravity-feed charcoal smoker cabinet.
Chief Product Designer and Kalamazoo grillmaster, Russ Faulk, will be assisting Raichlen throughout the class.
Following the course, participants will be treated to a family-style meal featuring the recipes Raichlen taught during the session.
